You can save money and time when you DIY and you never have to worry about finding yourself out of stock when your dairy-free friends go for coffee.

However, not all home cooking methods are equally effective. Just like an “As seen on TV” commercial, my expectations for making homemade almond milk in my juicer were high, but the reality was a little more humble. In a recent TikTok video by @shaynateresetaylor, food blogger makes a large batch of fresh almond milk in a few simple steps using her juicer. The kitchen gadget appears to pulverize the almonds in a silky drink that seems to compete with any version purchased from the store.

As I recently invested in a new fancy juicer myself, I knew I had to give it a try. To begin my journey to making almond milk, I gathered my supplies (only two ingredients: almonds and water) with high hopes that this would be an easy, cool situation. Although I managed to make almond milk in my juicer, I will admit it was a battle between expectation and reality. However, this does not mean that it was a futile experience. With a critical modification and a few basic hints, you will be quickly (and not so messy) on the right track to making delicious homemade almond milk in minutes.

Before you start, do not make the same mistake I did

Although I have a powerful juicer for extracting liquids from fruits and vegetables, my particular model is not the most milk-friendly nut design – which I learned the hard way. Basically, the key to making almond milk at home is to nail the fine emulsion created by mixing soft, soaked almonds with water at high speed. Unlike Shayna Taylor’s handy machine, which has a convenient valve that releases any juice or liquid into a container when opened, mine created a beautiful pool of water that leaked all over my counter (yes!).

What could I have done differently, you ask? After I finished cleaning up the mess, I quickly (and rather hurriedly) came to the conclusion that I should have just used a different type of juicer. However, after further thought, I realized that all of this could easily have been avoided. Instead of throwing the almonds and water in the hopper with the machine off and letting it sit for a while, I tried to work in smaller batches and safely kept the machine running as I added more and more. The result? Fresh almond milk. The moral of the story is to do a quick test run to make sure what type of juicer you are working with to avoid accidents in the kitchen.

So how do you really make almond milk in a juicer?

Taylor begins the recipe by soaking raw almonds overnight in cool water. The next morning, drain and rinse them before transferring the almonds to a large bowl. Then add cool filtered water in a one-to-one ratio to the almonds and add one tablespoon at a time to the juicer hopper while it is on. As the almonds are juice, a container collects the pulp. meanwhile fill the other with fresh milk.

If you have even less time, you can also put a medium saucepan of water and boil almonds. Once the surface starts to blister quickly, wipe it off and let it sit for 15 minutes before draining, rinsing and squeezing out the juice, as you would with soaked almonds overnight.

2. Give it a flavor aroma with spices, vanilla or dates

If you want to upgrade things, Taylor suggests adding flavor-enhancing ingredients like dates, cocoa powder or berries to add a little pizza to this simple recipe. I added a little agave, cinnamon, vanilla extract and a pinch of pink Himalayan salt to my batch.

So the answer is … not exactly. Savings are not important when it comes to almond milk at home. Considering the loss of moisture from the juice process, manual labor and time, buying it from the store may still be your best bet. That said, making it at home gives you the advantage of a super fresh product that you can flavor as you wish. The decision is yours!

How to make homemade almond milk (in a juicer).

Yields 2 servings

4 cups raw almonds
4 cups filtered water

In a large bowl, soak the almonds in filtered water overnight.
