The best pizza I have ever eaten was, unsurprisingly, in Rome. I was on a family trip when I was 13, and 15 years later, I can still vividly remember how delicious and delicious this simple Margherita pie was.

“We do not have more than 90 seconds to bring the pizza from the oven to the cryogenic freezer,” explains Edouard Freda, co-founder and CEO of the company. “This is what preserves the pizza and all its flavors … it turns out to be what we consider restaurant quality.”
Like other innovative startups, Talia di Napoli was born in a garage. Freda’s uncle, who had worked in the food business for many years, was determined to find how to make, package and deliver an iced pizza that was * actually * good (without saying that standard iced pizza is bad , but … there is time and place). After countless repetitions (and many, Many raised his eyebrows from his Neopolitan neighbors …) the team landed in a patented cryogenic freezing method, where the pizzas freeze immediately (“sleep”) as soon as they come out of the oven. This ensures that their flavors and textures are kept in place, so that when they “wake up”, they are just as good as they were when they were first cooked.
“The way to be completely authentic in tradition [of Neopolitan pizza] “It’s not just about having the technology, but following a rule book,” says Fred. “We decided to make an iced pizza, we are not going to follow the industrial iced route. “Except for the cryogenic chamber, everything is done entirely by hand.”
There are no kneaders or mixers or robots throwing pizza dough in the Talia di Napoli kitchen. Instead, there are about 25 chefs who toss the dough, add garnishes and toss them on the wood stove. Freda says the brand’s “regulation” is a real thing developed by chefs in the 17th century and describes exact acceptable ingredients and steps needed to make an authentic, neo-political pizza. This means that everything comes locally and sustainably, without GMOs, preservatives or other funky additives.
This also means that they are extremely tasty. Although they do not surpass the Roman pie I ate 15 years ago, they are quite close, taking me back to the sunny Italian streets with every bite. All you have to do is unroll them, put them in your preheated oven and bake them for the recommended time (usually around 9-12 minutes.) You will not be disappointed, I promise.
